Abstract
The quantities of major solid wastes, including pomace, seeds, stems, and filter residues, generated in New York State winemaking from native American and hybrid grapes were evaluated by direct weighing or difference measurement. Representative samples of the various solids from the major grape varieties used were analyzed for total reducing sugars and tartrates. Seed oil content was determined, and total organic nitrogen, total phosphate, and crude fiber were determined for pomace minus the seeds. In general, the results were similar to values reported in the literature for solid wastes generated from vinifera grapes.Keywords
