Abstract
This research deals with the evolution of variables such as pH, volatile acids and alkalinity during digestion process since they are useful to control acid tracking of such process. Two kinds of substrates are used: crude vine shoots and treated ones with sodium clorite in order to eliminate any traces of lignin. Since C/N relation is very high for both substrata, evolution of this relation as a consequence of the process is also studied.Keywords
