Abstract
Summary The effect of Ca on Zn incorporation into phytate in 2 solvent systems (pH 2.5 and pH 6 +) was investigated in a series of 5 experiments. It was found that in both solvent systems at wide Zn: Ca ratios, Ca enhanced the incorporation or adsorption of Zn into phytate and at narrow Zn: Ca ratios, Ca decreased Zn incorporation into phytate. The findings offer a rational explanation of biological observations concerning Zn-Ca effects in the presence of phytate.Keywords
