Preparation and Storage of Concentrated Cultures of Lactic Streptococci

Abstract
To insure proper performance of the concen- trated cultures when used to prepare cultured milk products. The composition of the growth medium should yield cells capable of optimum growth but not prevent or hinder the harvesting of the ceils. It is considered desirable that the growth medium contain milk solids to help insure that the concentrated cultures contain adequate biological activity. The suspending menstruum must provide protection to the ceils to minimize damage from freezing. There are several ways in which the cell crop or concentrate can be evaluated.
