Abstract
The volatile compounds of leek and asafoetida, which are known to comprise of sulphur compounds, have been studied and compared. For this purpose, the essential oil of both plants has been extracted, either from the leaves (leek), or from die gum (asafoetida). The identification of the constituents was performed using a GC/MS system. Some hypotheses were made on the unknown substances.Keywords
