Abstract
Lactobacillus viridescens had a lower optimal aw at an adverse than at a favorable pH value and temperature. Water requirements were affected by temperature, pH, added malate, and thiamine concentration. When any of these conditions was unfavorable, the lower limit of aw for growth was raised, the lag phase was lengthened, and the generation time increased. If any 2 environmental conditions were made adverse, the effects on the aw requirements were greater than if only 1 factor was made adverse.This publication has 4 references indexed in Scilit:
