Abstract
Breaking out the egg on a glass plate and measuring the height and width of the yolk in position in the white is a rapid and easy method of determining yolk index. The correlation coefficient between this method and one of the more laborious methods, in which the white is removed, is.97. The prediction equation is y = −0.001 + 0.9172x.Keywords
