Abstract
A new Saccharomyces species has been isolated from "alpechin". It is distinguished from other species of the genus by its ability to ferment and assimilate glucose, maltose, and melibiose. Galactose, sucrose, lactose and raffinose are not assimilated. The melibiase found in S. hiepiensis can hydrolyse raffinose.Keywords
