Carboxylic Ester Hydrolases of Apple

Abstract
p-Nitrophenyl esters of carboxylic acids (C2–C8) were used to characterize the carboxylic ester hydrolases of peel tissue of apple (Malus domestica Borkh.). The paper presents evidence for the presence of five ester hydrolases in the peel tissue which show differences in substrate specificity and molecular weight.
