Abstract
Ellagic acid and its derivatives were found to abrogate the enzymatic activity of the glucosyltransferases (GTases) of mutans streptococci. These compounds preferentially inhibited the water-soluble glucan synthesis by GTase of Streptococcus mutans MT8148 and inhibited the water-insoluble glucan synthesis by GTase of Streptococcus sobrinus 6715. This inhibition resulted in a reduction of cellular adherence of mutans streptococci to a glass surface.Keywords
