Abstract
Summary Multifloral and unifloral honeys produced in different years in Piedmont, Italy, were analysed for the components responsible for their flavours. Fifty-two volatile components were identified by capillary gas-liquid chromatography and gas-liquid chromatography/mass spectrometry and are reported here.
