The fatty acid composition of depot fats of the Somali sheep

Abstract
The fatty acid composition of adipose tissues from different sites of the Somali sheep was examined by liquid‐gas chromatography. The deep‐seated fats were relatively simpler in the constituent acids than the subcutaneous fats and showed less variation (mainly in the 18 C acids) in the degree of saturation compared with subcutaneous and tail fats. Relatively high concentrations of odd‐number and branched chain acids were found in most subcutaneous fats and lower concentrations in the deep‐seated fats.It is suggested that factors in addition to temperature are necessary to account for variations in depot fat composition in different parts of the animal.The fat is considered not desirable for human food owing to its high degree of saturation.Keywords
