Abstract
Incorporation of gelatin or Tween 40 directly into the primary isolation medium allowed detection of proteolytic and lipolytic yeasts and molds without the necessity of isolating and retesting all of the colonies. Application of the method to foods permits a total and differential count of yeasts and molds which produce specific extracellular enzymes.Keywords
