SOME ASPECTS OF THE NITROGEN METABOLISM OF YEAST

Abstract
Recent work relating to the uptake of nitrogenous substances by yeast is critically discussed, and, following Thorne (this Journ., 1949, 201), the thesis is sup ported that intact assimilation of annino acids plays a predominant part in the nitrogenous nutrition of yeast grown on wort. However, a mixture of amino acids such as is provided by casein hydrolysate will give yeast growth equal to that obtained on wort only when polypeptides are added, e.g., in the form of commercial peptone.
