Products of the β-amylolysis of maltodextrins

Abstract
Malto- dextrins from potato amylose were treated with [beta]-amylase and the products isolated by charcoal chromatography and finally identified as the acetyl derivatives. [beta]- maltose only was obtained from malto-tetraose and -hexaose, while equal quantities of [beta]-maltose and [beta]-maltotriose were obtained from maltopentaose.
