Study on competition between guaiacol and ascorbic acid in peroxidase reaction and on ion effect by means of absorption spectra

Abstract
The absorption spectra of the product of guaiacol oxidation registered in the region of 200–450 nm are characterized by three absorption maxima, 243, 293, and 450–470 nm. The competition between guaiacol and ascorbic acid as hydrogen donors of peroxidase is studied using these spectra. Ascorbic acid inhibits the oxidation of guaiacol and the three absorption maxima change differently. Some possibilities for an interaction between guaiacol and ascorbic acid are discussed; the formation of an intermediary complex compound might be presumed. Calcium, copper, and iron ions that are added in the reaction mixture lead to a modification of the competitive relationship between guaiacol and ascorbic acid.Keywords
