Abstract
The 1st edition of the recommended Ordinance and Code Regulating Eating and Drinking Establishments was issued in mimeographed form in June 1940. This edition was a culmination of 6 yrs.'' effort represented by 4 drafts and embodies the best information at present available on restaurant sanitation but it should be considered subject to change as improvements are developed through research and experience. It is recommended for voluntary adoption by states, counties, health districts, and municipalities in order to encourage a greater uniformity and a higher level of excellence in the sanitary control of eating and drinking establishments. The development of the recommended Ordinance and Code, the physical examination of employees, the provisions of the ordinance, and the extent of adoption of the program are discussed in detail. The restaurant sanitation ordinance has proven popular with health officers and it appears to be particularly useful at this time in connection with the sanitation of national defense areas in many of which the ordinance is already in effect.
