A SIMPLE INSTRUMENT FOR THE MEASUREMENT OF THE DYNAMIC ELASTIC PROPERTIES OF FOODSTUFFS

Abstract
A versatile and inexpensive instrument for measuring the dynamic viscoelastic properties of biological tissue is described. Where the sample is rheologically ‘well‐behaved’, a simple resonance technique enables very rapid measurements to be made. The use of the machine is illustrated by some results obtained on potato tissue.
