Abstract
This review describes the effect of crop management and environment on the composition of strawberries, raspberries, and brambles. Fruit texture, flesh colour, flavour, and sugar and acid content appear to be important attributes in berryfruit destined for processing. Seasonal variation, choice of cultivar, maturity, and, therefore, the use of mechanical harvesters are the most significant factors affecting the composition of berryfruit at harvest.Keywords
