Abstract
A rapid electrophoretic method was developed for separating whey proteins on cellulose acetate strips. Tris-barbital-sodium barbital buffer was used at pH 8.6 (ionic strength .097) with a constant current of 225 V for 1 h. Densitometer tracings showed excellent resolution of 5 peaks. The method can be used for .beta.-lactoglobulin typing of milk and for monitoring heat denaturation of whey proteins.This publication has 2 references indexed in Scilit:
