Total β-amylase in barley used as screening criterion for combined amylolytic activity in malt

Abstract
The combined amylolytic activity of malt is often evaluated by Diastatic Power (DP). Using new specific colorimetric assays recently developed by McCleary B-amylase was found highly correlated to DP whereas only insignificant correlations were observed between DP and a-amylase/limit dextrinase. By modifying the extraction conditions a procedure for determination of total B-amylase in barley has been worked out.
