Abstract
Apart from chemical and biochemical malt analyses, it is useful also to judge appearance and inner structure of the malt. The old method used to judge the inner structure—cutting the grain to get a longitudinal section—has been replaced with sanding off half the grain. By means of coloration with methylene blue the judgement is also simplified. The sanding method provides information on the degree of modification and also on the quality of the barley and the malting process that have been used.
