Abstract
Sensitivity of dry yeast and maceration juice to poisons was of the same or greater magnitude than with living yeast. The poisons must therefore act on the zymase. Ethyl ether, chloroform, and strychnine in small amounts stimulated fermentation. In larger amounts they inhibited it. Toluol could not stop fermentation completely. Thymol quinine hydrochloride, NaF, and HgCl2 always checked fermentation even when present in small amounts. Cocaine nitrate in small quantities stimulated fermentation and in larger quantities inhibited it. Even as high amounts as .03 gm. of cocaine to 20 cc. water, 2 gm. of yeast, and 2 gm. sucrose still had a stimulating effect.
