Abstract
Lipids recovered from the intestinal lumens of 11 healthy young men fed hydrogenated fat were found to contain up to 13% monoglycerides and 1/2 to 2/3 of this was present as 2-monoglycerides. The free fatty acid content was 2 to 3 times the total monoglyceride content. Three subjects were fed margarine in a breakfast meal and the proportion of fat digestion products in the lipids recovered was not significantly different than when fat was fed alone. Interfacial tension measurements made on intestinal lipids against the corresponding aqueous phases showed a high level of surface activity during fat digestion.Keywords
