Abstract
Measurements made at different points on the tissue, by means of a special micro-electrode, at various stages in the life of the plant showed that the most acid parts were (a) the underground stem and heel during early stages of development, and (b) the active eyes during sprouting. The average acidity of the tuber increased with maturity, but was independent of environment, variety, or storage.
