Nutritional Composition of Sweet- and Acid-type Dry Wheys. II. Vitamin, Mineral, and Calorie Contents

Abstract
Commercial samples (12-15) of sweet and acid-type dry whey were analyzed each quarter for 12 vitamins and 14 minerals during a year. Mean vitamin contents for sweet and acid-type per 100 g were vitamin A 136 and 107 IU, C 1.41 and .33 mg, B6 .59 and .62 mg, B12 2.4 and 2.5 .mu.g, tocopherol .063 and .071 mg, thiamin .51 and .49 mg, riboflavin 2.14 and 1.85 mg, pantothenic acid 11.5 and 11.4 mg, biotin 43.0 and 35.0 .mu.g, niacin 1.30 and 1.16 mg, folacin .0116 and .0332 mg and choline 104 and 101 mg. Storage for 22 mo. resulted in an average decrease of 70.9% for vitamin A, 34.8% for B6, and 34.3% for biotin. The mineral values for the sweet and acid-type dry wheys have means per 100 g of Ca 878 and 2404 mg, P 1096 and 1588 mg, Na 1287 and 1087 mg, K 1855 and 1915 mg, Mg 178 and 224 mg, Zn 2.1 and 8.1 mg, Fe .9 and 1.3 mg. Cu was 2.8 and 5.3 ppm, I 6.79 and 8.64 ppm, Pb 1.15 and 1.68 ppm, Hg .02 and .03 ppm, Se .064 and .034 ppm, Cd .11 and .14 ppm, and As .77 and .59 ppm; Kcal/g were 3.71 and 3.86.Keywords
