Abstract
The saponification of α‐monomyristin, α‐monostearin and α‐mono‐olein has been studied in 75% (v/v) aqueous alkaline acetone.The reactions obey a second‐order law. The energies of activation for the three monoglycerides are very similar: α‐monomyristin, 9900; α‐monostearin, 11,100; α‐mono‐olein, 10,800 g.‐cal.The glycerides show the general phenomenon of alcoholysis in aqueous alkaline ethanol solutions.Keywords
