The action of nitrous acid on pepsin

Abstract
This reaction has been studied up to pH 4.5 and at 0[degree] and 38[degree]. The rate is proportional to the concn. of unchanged pepsin and of HN02, and depends slightly upon the [NO2[image]] concn. The product is a yellow photosensitive diazo compound and has 50% of its original activity. Comparisons with the action of HNO2 on amino-acids and other substances indicate that the fall in activity is due to an action on tyrosine groups of pepsin.
