Abstract
A method is described for determining fat in skimmilk and nonfat dry milk solids which is suitable for routine use. The method is based on measuring the area of a monolayer of fatty extract formed by transferring 0.007 to 0.008 ml. of its ether soln. to a prepared surface on a soln. of 0.2% CH3 COOH. Results are reported which indicate close agreement with the standard Mojonnier method. A skim milk sample will agree to 0.01% and a NDMS sample to 0.1% with the Mojonnier method.
