Essential Amino Acid Composition of Some Common Indian Pulses

Abstract
The essential amino acid composition of 5 common Indian pulses and a legume (Vigna catjang) has been reported. Unlike lysine, which is the limiting amino acid for cereals, the limiting amino acids for pulses were found to be methionine, cystine and tryptophan. The relationship between the chemical score, essential amino acid index and biological value is discussed.Keywords
