Quantitative Determination of Soyasaponins in Soybeans of Various Origins and Soybean Products by Means of High Performance Liquid Chromatography

Abstract
The fluorescent coumarin derivatives of soy saponin I (1), II (2), III (3), A1 (4) and A2 (5) were examined by high performance liquid chromatography (HPLC). A quantitative determination method for 1-5 by HPLC was developed. By means of this method, the respective soy saponin contents in various kinds of soybeans and soybean products were clarified.
