Abstract
A rapid method for the titration of gelatins, using direct titration with successive glass electrodes and a modified Cambridge pH meter is described. For the interpretation of the titration curve, the authors propose the revised values - pH 1.5 - 6.5 for carboxyl, 6.5 - 8.0 for alpha-amino plus imidazole, 8.0 - 11.5 for episilon-amino. With these criteria, satisfactory agreement is obtained with values obtained by chromatography, including the value for histidine which previously gave an anomalous value from titration curve analysis.Keywords
