The determination of short- and long-chain free fatty acids in milk

Abstract
A series of methods designed to overcome the problem of obtaining a high recovery of hydrophilic short-chain free fatty acids without the simultaneous extraction of interfering hydrophilic acids such as lactate during the analysis of milk products are described. The choice of method depends on a knowledge of the lactic acid concentration expected in the sample.
