Abstract
Hops cultivated in the Hop Research Institute at Žatec have been examined to determine the influences of climatic conditions on the proportions of the three components of the α acids, viz. cohumulone, adhumulone and humulone. In Fuggle and Northern Brewer, grown in Czechoslovakia, cohumulone accounted for only 20% of the α acids, whereas the same varieties, grown in England, had values of 30%; similar differences were found with other hops. The influence of climate on the synthesis of α acids is important. A division of hop varieties into six groups has been made on the basis of (a) the ratio of α acids to β fraction, and (b) the percentage of cohumulone in the α acids.Keywords
