Abstract
Equations have been derived relating surface colour and firmness to storage temperature and time for tomatoes of the cultivar Nemato. These equations were used to predict colour and firmness after storage under various irregular temperature regimes. Colour and firmness changes were both additive and commutative and could be used to predict the storage life of tomato fruit under any fluctuating temperature conditions between 12 and 27°C.Keywords
