Abstract
In order to maximize success and avoid costly failures of microwave applications in the food industry it is important that the microwave equipment manufacturers lead the way to realistic assessments of the potential applications. In depth examination with meaningful answers to the following questions are of utmost importance: 1. What is the real problem?; 2. What are the true economics of the situation.; 3. Is the effect of microwaves in the system truly unique?; 4. Could direct and indirect labor charges on a given product be reduced by the addition of microwave power?; 5. What is the best combination of energy sources for the particular application? Wherever possible discussions should be held with a cross-section of personnel who will be involved with using the process if installed. Finally, attention should be paid to anticipating start-up problems and providing personnel and means for keeping the equipment on the air.Keywords
