A Possible Role of Food Purification in the Etiology of Dental Caries

Abstract
It has been possible to produce dental caries in rodents by feeding a finely powdered, purified ration containing 67% purified carbohydrates, primarily sucrose, and complete in known nutritional essentials. The caries developed only when this purified diet was commenced during tooth development. Analysis of dental caries in about 800,000 children in 11 European countries during the last 50 yrs. showed that caries reduced markedly following drastic reductions in consumption of refined carbohydrates at the beginning of the 2 World Wars. The mechanism of the beneficial influence upon teeth during the war is unknown. It may be related to the fact that the bulk of caloric intake during the wars was in the form of natural foods.Keywords
