Abstract
The reaction of alanine-3-sulfinic acid with 2-mercaptoethanol (2-ME) was examined at pH 1.5 and pH 4.0 at 110 °C. The sulfinic acid is readily reduced at pH 1.5 to cysteine, 2-L-amino-7-hydroxy-4,5-dithiaheptanoic acid, cystine, and three other ninhydrin positive substances. The reduction is much slower at pH 4.0; the major reaction product is the 2-ME/cysteine mixed disulfide. The results show that 2-ME at acid pH does not give quantitative reduction of alanine-3-sulfinic acid to cysteine.Keywords
