Abstract
The flesh of pineapples is yellow because of the presence of carotene and xanthophyll. The amount of pigment present varies greatly among varieties and within a variety. The commercial pineapple of the Hawaiian Islands, tne Cayenne, contains 0.10 to 0.25 mg. carotene per 100 gram flesh.This publication has 4 references indexed in Scilit:
