Respiration in Strawberry Fruits

Abstract
An exceedingly sensitive respirometer is described, by which the rate of respiration of a single strawberry over 1/2 min. can easily be measured. The amount of O used by the Missionary strawberry at 5-40[degree]C. was determined, and amounts of O required by strawberries during shipment in carload lots were calculated. The maximum initial rate occurs at 36.5[degree]C. The temp. coefficient for the respiration of the Missionary strawberry is 2.5 below 25[degree]C. Strawberries are very effectively protected from water loss in dry air and have a very constant water content (89.5-90%). The Gibson strawberry, northern grown, has a much higher rate of respiration at low temp, than the Missionary, which is southern grown. Acid content declines as strawberries ripen. The respiratory ratio is greater than 1. Ethylene gas has no effect in ripening strawberries.Keywords
