Abstract
As examination after extraction by the usual methods throws no light on the methoxyl content of pectin in vivo, a preparation was obtained from lemon by hand-pressing and immediate precipitation, which gave an apparent methoxyl content of 8.57%. However, when a correction is applied for the purity of the product, by estimation as Ca pectate, a corrected figure of 11.48% was obtained, approximating the theoretical figure of 11.76% for tetra-methoxyl pectic acid. The view that pectin normally exists in the tri-methoxylated condition is not tenable in this case; here the pectin must be regarded as almost completely esterified. Indirect evidence is obtained of the presence, in such preparations, of some other substance, probably pectin degradation products, with a furfural yield similar to that of pectin.This publication has 3 references indexed in Scilit:
