Abstract
Water-soluble procyanidins obtained by fermentation of a tannin extract of roots of Fragaria vesca were analyzed by high performance liquid chromatography. Three dimers, procyanidins B1, B2 and B5, and two monomers, (+) catechin and (-) epicatechin, were identified and quantified.
