Abstract
An instrument was developed to measure the spread-ability of butter. Results obtained with it were closely correlated with those obtained from consumer preference studies. The spreadability instrument was more sensitive than large scale consumer preference tests in detecting differences in spreadability. Hardness, as obtained with a sectility apparatus, was to be closely related to spreadability.This publication has 2 references indexed in Scilit:
