Abstract
Analyses of grain grown, in variety, on trial plots have been used to obtain mean contents of iron and manganese in British wheat, 3.4 and 2.8 mg. per 100 g. of grain respectively. Small but significant differences in the level of both minerals have been found between wheat varieties. The iron content of wheat is strongly influenced by locality and there is evidence that it is positively correlated with protein content, for which data are also presented.Keywords
