Abstract
The sweetness of dextrose compared with sucrose as a standard equal to 100 was established for 5 human subjects by the method of successive comparison. The sweetness value of dextrose was found to vary with the concn. At a sucrose concn. of 10%, dextrose has a relative sweetness value of 65; at a concn. of sucrose of 25%, the dextrose sweetness value rises to 71; and at a sucrose concn. of 40%, dextrose reaches a sweetness value of 83. The relative sweetness of a 2/3 sucrose, 1/3 dextrose mixture is almost identical with a value obtained by calculation from the separate sweetness values of the 2 sugars at a concn. equal to that of the mixture.
