THE INFLUENCE OF HYDROGENATION AND OXIDATION OF FATS UPON THEIR RATE OF ABSORPTION

Abstract
Samples of cottonseed oil hydrogenated progressively to melting points of 10 to 37.8[degree] C. were absorbed by rats at identical rates. When the melting points exceeded body temp. the rate of absorption was progressively reduced. Hydrogenated cottonseed oil oxidized by aeration but of practically constant melting point was absorbed at a decreasing rate with increasing peroxide number.
