Abstract
The EPR spin probe technique was used to study coagel-gel and gel-liquid crystal phase transitions in three amphiphilic systems. The partition of the small, hydrophilic spin probe molecules between the lipid and water environment was measured. In the coagel phase the spin probe molecules were excluded from the crystallized lipid, while in the liquid crystalline phase they were dissolved in both environments.
