The chemistry of wheat germ with particular reference to the scutellum

Abstract
The distribution of aneurin relative to the scutellum and remainder of the germ in 11 commercial wheat types and rye, barley, oats and maize is reported. The average aneurin content of the scutellum of the wheats was 59 I. U. per gram. The average wt. of the scutellum was 1.5% of the grain wt. and it contained 59% of the total aneurin of the grain. Comparable figures for the remaining portion were:- 4 I. U. per gram; 1.2% and 3%.
