Abstract
The Hops Analysis Sub-Committee of the Analysis Committee examined methods for determining α acids in hops. Polarimetric, conductometric and spectrophotometric methods were examined in detail. A major source of error in all the methods studied was the extraction of the sample, and ways of minimizing variability have been incorporated into the recommended methods. Polarimetric assay of the extract is the only method which is specific for α acids and is recommended as the reference method. For routine control analyses, the more convenient conductometric method is preferred.Keywords
