Abstract
A two-stage methodology is described for assessing the effects of population size and characteristics on the number of restaurants with specific menu specializations. The results of the analysis can then be used to predict the expected number and type of restaurants in an urban market, allowing assessment of which market has the greatest potential for supporting additional restaurants.Keywords
